Rose syrup
Preparation
Rose syrup is made by infusing freshly picked petals in hot water and lemon juice. It is best to use water that is low in limescale, to best preserve the scent and the beautiful ruby colour that comes exclusively from the petals. After a suitable infusion time, the petals are gently pressed with a small press to obtain the rose water which, once the sugar is added, is cooked, filtered and then stored in steel drums. Only later does bottling take place. The ingredients used are only very fresh rose petals, organic sugar, mineral water and fresh lemon juice. The scent is delicate but intense, of a freshly picked rose.
Ideal for
Rose syrup, diluted with cold water, a few slices of lemon or a mint leaf, becomes a pleasant refreshing drink. A few drops in a glass of cold sparkling wine or in a fruit cocktail are also very pleasant, as is a little in hot or iced tea.
Other uses include: in fruit salad, even just peaches or melon, over strawberries and raspberries with cream, to flavour various spoon desserts such as panna cotta or bavarois, on crêpes. Excellent for flavouring delicately flavoured ice creams. The traditional use in Liguria is to dilute it with cold water or with hot water as a restorative drink: not so long ago in Genoa, boys on youth football teams drank it at half-time.

Preserved roses

Preparation
The preserve is made like an ordinary jam, the only difference being the raw material, rose petals instead of fruit. The freshly picked petals are combined with sugar, lemon juice and a little water; no pectin, thickeners or preservatives are added. Once a homogeneous mixture is obtained, it is all chopped, cooked and put into jars while hot. Our preserve is characterised by a flavour that develops in three distinct phases: the first is tannin, the second is sweetness, the third is the pure essence of the flower, which bursts in the mouth and lingers with great intensity. This makes it a concentrate of flavour, and a very small amount is enough.
Ideal for
The preserve is ideal for breakfast; it can be spread on buttered toast or mixed with plain natural yogurt. It can be used as a cold filling for sponge or chocolate cakes, to perfume a good sheep’s ricotta or, even better, a buffalo’s one. It can accompany some types of cheese, such as a fresh pecorino or goat cheeses.
